Easy artisan bread:
2 TBSP yeast
1 TBSP salt
3 cups lukewarm water (or you can use warm whey from your leftover homemade cheese!)
7 cups flour
Combine all. The dough will be a little bit sticky. Cover and let rise for 1-2 hours depending on your patience level. I usually last an hour, but it’s better if you wait longer.
Flour your pan so the bread doesn’t stick. You might have to do it a couple of times. Take some of the dough and shape it as much as possible, without squishing the dough. Flour the top if desired. Let rise for 1-2 hours.
Place a skillet on the bottom rack of the oven. Preheat oven to 450°F.
Take scissors and cut the top of your bread. I cut three slashes. Get a cup of cold water ready. Place your bread dough in the oven, and pour your cold water into the bottom pan and shut the oven door. Set the timer for 25 minutes and WALK AWAY. Don’t open the oven. The water will create steam to give your bread a crispier crust.
Remove from oven when time is up or bread is golden brown.
